sausage calzones

Ingredients

  • 2 pizza doughs divided in ½
  • ½ lb ground sausage
  • 15 oz ricotta cheese
  • 1 ½ cups shredded mozzarella
  • ½ cup parmesan cheese
  • 2 eggs divided
  • 1 tbl chopped parsley
  • salt & pepper
  • marinara sauce for dipping

Instructions

  1. preheat oven to 450 degree
  2. cook sausage, breaking up until browned, 5 minutes
  3. mix ricotta cheese, mozzarella cheese, parmesan cheese, 1 egg, parsley, salt & pepper
  4. let sausage cool and drain on a paper towel
  5. roll out dough into 4 rounds
  6. mix cooled sausage with ricotta
  7. place ¼ of the mixture on one half of the pizza dough
  8. fold other half of dough over to make a semi-circle
  9. seal edges of calzone with a fork
  10. place calzones on a parchment lined baking sheet
  11. brush each calzone with the beaten egg
  12. bake for 20 minutes, turning tray around halfway through
  13. serve with marinara sauce
