pork chops with salsa verde

Ingredients

  • ¼ cup chopped parsley
  • 3 tablespoons chopped mint
  • 2 tablespoons finely chopped chives
  • 2 tablespoons finely chopped garlic
  • 1 tablespoon lemon juice
  • salt & pepper
  • teaspoon chili flakes
  • ½ cup plus 1 tablespoon olive oil
  • 4 boneless pork loin chops , 1/4-inch thick

Instructions

  1. mix parsley, mint, chive, garlic, lemon juice, salt & pepper, chili flakes and ½ cup olive oil in a blender
  2. add 2 tbl olive oil to a cast iron skillet and heat over medium-high heat
  3. cook pork chops 3 minutes per side
  4. let side for 3 minutes
  5. serve topped with salsa verde
