pimento mac & cheese

Ingredients

  • 1 lb pasta
  • salt & pepper
  • ½ stick butter
  • 1 clove garlic grated
  • ¼ cup grated onion
  • 3 tbl flour
  • 2 cups milk
  • 2 tsp paprika
  • 1 tsp dry mustard
  • 2 cups shredded cheddar cheese
  • 1 4 oz jar chopped pimentos , drained

Instructions

  1. preheat broiler
  2. cook pasta in salted water according to package
  3. melt butter and saute garlic and onion for 1 minute
  4. add flour and cook for 2 minutes
  5. add milk and stir cooking over a low heat until thick
  6. add paprika, dry mustard, salt & pepper
  7. turn off heat and add cheese, stir until melted
  8. mix in cooked, drained pasta and pimento
  9. pour into a casserole dish
  10. broil for 2-3 minutes until browned on top
