pasta with a roasted grape tomato sauce

Ingredients

  • 1 lb pasta
  • salt & pepper
  • 1 package red grape tomatoes
  • 1 package yellow grape tomatoes
  • sugar
  • 2 tbl olive oil , divided
  • 2 cloves , garlic, minced
  • 1 tsp red pepper flakes
  • 1 tsp oregano or italian seasoning
  • parmesan cheese

Instructions

  1. preheat oven to 450 degrees
  2. toss tomatoes with a pinch of sugar, 2 tbl olive oil, garlic, red pepper flakes, oregano, salt & pepper
  3. spread on a foil lined baking sheet and roast 20-25 minutes
  4. cook pasta in boiling salted water and drain, reserving ½ cup cooking liquid
  5. drain the pasta and place in serving bowl
  6. add cooked tomatoes and their juices to the bowl, adding pasta water as needed and toss together
  7. serve topped with grated parmesan cheese
