rigatoni with broccoli

Ingredients

  • 1 lb rigatoni
  • salt & pepper
  • 1/2 cup garlic oil
  • 3 cloves garlic , minced
  • 1 bunch broccoli , cut into bite sized pieces
  • ½ cup chicken broth
  • locatelli cheese

Instructions

  1. cook broccoli in salted boiling water for 2 minutes until bright green
  2. remove broccoli with a slotted spoon
  3. cook rigatoni in the same water
  4. heat oil in a pan and add garlic and saute 1 minute
  5. add broccoli, chicken broth, salt & pepper
  6. cook for 4-5 minutes
  7. drain pasta and add to pot and stir to combine
  8. sprinkle with locatelli cheese and pass extra around to serve
