pork fajitas

Ingredients

  • package thin sliced pork chops
  • 1 tsp ground cumin
  • kosher salt and black pepper
  • 2 tbl olive oil
  • 1 onion , sliced
  • 2 bell peppers , sliced
  • 8 flour tortillas
  • 1 avocado , cut up
  • 1 cup cilantro
  • Pico de gallo
  • cheese

Instructions

  1. preheat grill
  2. season the pork with the cumin, salt & pepper
  3. toss onions and peppers with olive oil, salt & pepper and wrap in foil
  4. place foil on grill and close cover and cook for 10 minutes
  5. flip foil and continue to cook peppers and onions as you grill the chops
  6. grill pork chops 2-3 minutes per side
  7. transfer to a cutting board and let sit as you warm the tortillas
  8. grill tortillas to warm and place on a covered plate
  9. slice pork into strips
  10. serve the tortillas with the pork, peppers and onions, avocado, cilantro, and pico de gallo and cheese
