lemon spaghetti

Ingredients

  • 1 lb spaghetti
  • ½ cup olive oil
  • juice and zest of 3 lemons
  • ½ cup parmesan cheese
  • salt & pepper
  • ¼ cup chopped parsley

Instructions

  1. cook spaghetti in boiling salted water, reserving ½ cup cooking liquid
  2. mix olive oil, lemon juice, parmesan cheese, salt & pepper in a measuring cup
  3. drain spaghetti, reserving 1/2 cup cooking liquid
  4. add pasta back to the pot and mix with the sauce, adding cooking liquid as needed
  5. serve topped with parsley
