chicken in a lemon caper sauce

Ingredients

  • chicken thighs
  • salt & pepper
  • 1/3 cup flour
  • 1 lemon , zested and juiced
  • ½ tsp paprika
  • ½ tsp garlic powder
  • 2 tbl olive oil
  • ½ cup white wine
  • ½ cup chicken broth
  • 1 can artichoke hearts , drained and cut in half
  • ¼ cup capers , drained

Instructions

  1. season chicken with salt and pepper
  2. mix flour, lemon zest, paprika and garlic powder in a bag
  3. add chicken and toss to coat
  4. heat olive oil over medium high heat
  5. cook chicken 5-7 minutes per side until cooked through
  6. add wine, chicken broth, lemon juice, artichoke hearts and capers and simmer for 5 minutes to heat through and thicken
