pork milanese

Ingredients

  • 1 package thin sliced boneless pork chops
  • 1 cup panko bread crumbs
  • 1 cup seasoned bread crumbs
  • ½ cup locatelli cheese
  • salt & pepper
  • 2 eggs beaten with ¼ cup water
  • ¼ cup olive oil

arugula salad:

  • 1 bag of arugula
  • ½ red onion , diced
  • 2 tomatoes , diced
  • small mozzarella balls , cut in 1/4ths
  • balsamic vinegar
  • olive oil
  • salt & pepper

Instructions

  1. mix both bread crumbs and cheese in a shallow dish
  2. put eggs and water in a shallow dish
  3. season pork with salt and pepper
  4. dredge pork in egg and then in breadcrumbs, pressing to adhere
  5. place pork cutlets on a plate as you bread all the pieces
  6. heat oil over medium-high heat
  7. cook pork cutlets 3-4 minutes per side over medium-high heat in batches– do not crowd in pan.
  8. keep cutlets warm on a rack over a cookie sheet in a 300-degree oven as the rest of the cutlets cook
  9. top with arugula salad

arugula salad:

  1. mix arugula, onion, tomatoes and mozzarella
  2. season with salt & pepper
  3. drizzle with olive oil and balsamic vinegar and toss
