california chicken salad

Ingredients

  • 2 boneless skinless chicken breasts
  • blackened seasoning
  • 2 tbl olive oil
  • 1 head romaine lettuce , chopped
  • 2 carrots , grated
  • ½ cup crumbled blue cheese
  • ½ cup dried cranberries
  • ½ cup mandarin oranges
  • 1 cup sliced strawberries
  • 1 cup candied pecans

balsamic vinaigrette

Instructions

  1. season chicken with blackened seasoning and saute in olive oil 4 minutes per side until cooked through
  2. slice chicken into strips
  3. combine lettuce, carrots, blue cheese, cranberries, mandarin oranges, strawberries and pecans and toss with dressing
  4. serve with sliced chicken on top
