sausage and spinach stuffed shells

Ingredients

  • 1 box large pasta shells
  • 1 lb italian sausage , casings removed
  • 1 bag spinach
  • 2 eggs , beaten
  • 1 small container ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 3 cups spaghetti sauce

Instructions

  1. cook pasta shells according to package directions.
  2. while pasta cooks, brown sausage breaking it up as it browns
  3. add spinach and let wilt
  4. combine eggs, ricotta, and 1 cup mozzarella cheese
  5. add sausage and spinach and mix well
  6. fill each pasta shell with 3 tablespoons of filling.
  7. pour ½ cup sauce on bottom of a baking dish and put shells on top
  8. top with remaining sauce and mozzarella cheese
  9. bake at 350 degrees until heated through, about 30 minutes
