sesame shrimp

Ingredients

  • 1/2 cups jasmine rice
  • 1 lb shrimp
  • 1- inch ginger , grated
  • 1 bunch scallions , sliced thin
  • 2 cloves garlic , minced
  • 3 tbl hoisin sauce
  • 2 tsp sesame seeds , toasted
  • 1 lime
  • 2 tbl oil

Instructions

  1. cook the rice in salted water
  2. in a medium bowl, toss together the shrimp, hoisin, garlic, and half the ginger until thoroughly combined.
  3. season with salt and pepper.
  4. heat a large drizzle of oil in a large pan over medium heat.
  5. add the scallions and remaining ginger.
  6. cook, tossing, for 2-3 minutes, until soft and slightly golden.
  7. transfer to the pot with the rice, stir to combine, and cover.
  8. with about 4 minutes’ left on the rice, add the marinated shrimp to the same pan over high heat along with a large drizzle of oil.
  9. cook, tossing, for 3-4 minutes, until shrimp are opaque and slightly charred on the outside.
  10. cut the lime into wedges.
  11. serve the shrimp on a bed of scallion rice
  12. sprinkle with the sesame seeds.
  13. serve with a lime wedge and enjoy!
