rigatoni alla vodka

Ingredients

  • 1 lb rigatoni or penne pasta
  • salt & pepper
  • 2 tbl butter
  • 2 tbl olive oil
  • 1 small onion , finely diced
  • 3 cloves garlic , minced
  • ¼ cup vodka
  • 1 30 oz can tomato sauce
  • 1 cup heavy cream
  • ½ cup locatelli cheese
  • 5-10 fresh basil leaves , cut in pieces with a scissor

Instructions

  1. cook pasta in boiling salted water
  2. heat butter and olive oil in a pot
  3. add onion and saute 2-3 minutes until soft
  4. add garlic and saute 1 minute more
  5. add vodka and cook until dissolved
  6. add tomato sauce and salt & pepper and simmer for 20 minutes
  7. add heavy cream and cheese
  8. drain pasta and add to sauce and toss to coat
  9. place in a serving bowl and top with basil, passing more cheese
