chicken breast stuffed with herb cheese

Ingredients

  • 4 chicken cutlets
  • boursin cheese
  • 2 tbl canola oil
  • 5 tbl butter divided
  • ½ cup white wine
  • ½ cup chicken broth
  • salt & pepper

Instructions

  1. preheat oven to 350 degrees
  2. flatten chicken to ¼ inch
  3. divide cheese into 4 portions and roll into cylinders
  4. place cheese cylinders in center of each breast
  5. roll chicken around cheese cylinder and tie with string
  6. season chicken with salt & pepper
  7. sauté in oil and 2 tbl of butter until brown on all sides
  8. transfer pan to 350-degree oven and cook for 12-15 minutes
  9. remove chicken to plate
  10. place skillet back over medium heat and deglaze with wine and chicken broth
  11. add salt and pepper and reduce
  12. swirl in remaining 3 tbl butter
  13. remove string and slice chicken
  14. serve in a pool of sauce and fan out chicken slices

Recipe Notes

if your package of chicken comes with more than 4 cutlets, simply divide the cheese in that many portions
