chipotle chicken burritos

Ingredients

  • 2 chicken breasts
  • 1 can adobo sauce
  • ½ cup water
  • ½ red onion cubed
  • 3 cloves garlic minced
  • salt & pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 tbl olive oil
  • ½ cup rice
  • 1 cup water
  • 1 cilantro cube
  • juice and zest of 1 lime
  • 1 can black beans
  • 1 cup shredded jack cheese
  • 4 large tortillas

Instructions

  1. mix, adobo sauce, water, onion garlic, salt, pepper, cumin, oregano and olive oil in a blender
  2. pour over chicken and let sit 15 minutes
  3. boil water and simmer rice, covered, 15 minutes
  4. add cilantro cube, lime zest and juice
  5. stir and cover to keep warm while assembling the burritos
  6. while rice is cooking warm the black beans and saute the chicken in a skillet until cooked through
  7. when the chicken is done, let is sit for 5 minutes and the dice in small pieces
  8. warm the tortillas in a pan for 1 minute per side over low heat until soft and pliable
  9. assemble burritos, with rice & beans, chicken and cheese
