meatball subs

Ingredients

  • 1 lb meatloaf mix or ground beef
  • 1 egg
  • 1 cup bread crumbs
  • ¼ cup milk
  • ¼ cup locatelli cheese
  • 1 clove garlic grated
  • 3 tbl chopped parsley
  • ¼ tsp crushed red pepper
  • salt & pepper
  • 2 tbl olive oil
  • 1 jar tomato sauce
  • ½ lb sliced mozzarella
  • 4 sub rolls

Instructions

  1. mix meatloaf mix, egg, bread crumbs, milk, cheese, garlic, parsley, crushed red pepper and salt & pepper
  2. form into meatballs
  3. heat olive oil in a skillet
  4. brown meatballs on all sides
  5. add sauce to pan, cover and simmer for 15 minutes
  6. top meatballs with a slice of cheese and cover pan to melt
  7. place meatballs on rolls and serve
