baked fish filets

Ingredients

  • 1 ½ lbs flounder
  • salt & pepper
  • 3 tbl butter
  • 1 shallot diced
  • ¼ cup white wine
  • ¼ cup heavy cream
  • ¼ cup panko bread crumbs
  • 1 tbl chopped parsley

Instructions

  1. preheat oven to 450 degrees
  2. sprinkle fish with salt & pepper
  3. use 1 tbl butter to grease a 9x13 inch baking dish
  4. sprinkle bottom of the dish with ½ the shallots and salt & pepper
  5. roll fish up and place seam side down over shallots
  6. pour wine and heavy cream over fish
  7. sprinkle top with bread crumbs, the remaining shallots, parsley, salt & pepper
  8. dot with remaining 2 tbl butter
  9. bake for 20 minutes until breadcrumbs are browned and fish is cooked thru
