one skillet italian sausage and potatoes

Ingredients

  • 1 tbl extra virgin olive oil
  • 1 lb sausage
  • ½ sweet onion chopped into ½-inch pieces
  • 1 lb red potatoes chopped into ½-inch pieces
  • 2 garlic cloves minced
  • 1- pint cherry tomatoes sliced in half
  • 1 tbl chopped rosemary
  • 1 tbl chopped basil
  • salt & pepper

Instructions

  1. warm oil in a large skillet over medium-high heat, add sausage and cover.
  2. cook until browned, turning once.
  3. after sausages are browned add potatoes, onion, salt and pepper.
  4. cover, stir often.
  5. remove sausages once they are mostly cooked through.
  6. spread potato mixture across skillet and cook for about 10 minutes, stirring occasionally.
  7. slice sausage into ½” pieces and return to pan.
  8. add rosemary, garlic and the tomatoes.
  9. cook about 5 minutes or until tomatoes are cooked.
  10. add basil and stir to combine.
  11. serve and enjoy!
