street chicken tacos

Ingredients

  • 2 boneless chicken breasts sliced into 4 thinner pieces
  • 2 chipotle peppers in adobo sauce or 1 can adobe sauce
  • ¼ cup minced cilantro
  • juice of ½ lime
  • 1 tbl taco seasoning
  • 3 tbl canola oil
  • taco shells soft or hard or both, warmed
  • shredded jack cheese
  • pico de gallo
  • guacamole
  • lime wedges
  • cilantro

Instructions

  1. marinate chicken in diced chipotle peppers with 2 tbl of adobo sauce, cilantro, lime juice and taco seasoning
  2. let sit at room temp for 20 minutes or in refrigerator for several hours.
  3. preheat grill or heat oil in a cast iron skillet
  4. cook chicken 5-6 minutes per side until cooked through
  5. dice chicken
  6. warm tortillas on grill or in the oven
  7. serve with jack cheese, pico de gallo, guacamole, lime and cilantro
