le big matt burger

Ingredients

  • 1 ½ lbs 80% lean ground beef
  • salt & pepper
  • ½ cup mayo
  • 2 tbl chili garlic sauce sambal
  • 8 slices white american cheese
  • pretzel rolls
  • arugula
  • bread and butter pickles
  • spicy waffle fries

Instructions

  1. form meat into 8 balls, 2 inches in diameter
  2. season with salt & pepper
  3. heat a cast iron skillet
  4. mix mayo and chili garlic sauce
  5. toast pretzel buns in pan, being careful not to burn
  6. place 4 balls in the cast iron skillet and smash with a spatula
  7. cook until blood pools in the middle of the burger
  8. flip and top with cheese
  9. cook 2 minutes more
  10. place sauce on the bottom of the bun and top with arugula
  11. place 2 burgers on the bun and top with sauce and pickles and top bun
  12. serve with spicy waffle fries
