skillet meatballs with garlic toast

Ingredients

meatballs:

  • 1 lb meatloaf mix
  • 1 egg
  • 1 cup bread crumbs
  • ¼ cup milk
  • ¼ cup locatelli cheese
  • 1 clove garlic grated
  • 3 tbl chopped parsley plus extra for serving
  • ¼ tsp crushed red pepper plus more for sauce
  • salt & pepper
  • 2 tbl olive oil
  • 3 cloves garlic minced
  • 2 cans crushed tomatoes
  • italian seasoning
  • basil

garlic toast:

  • 1 loaf french or italian bread cut in half lengthwise and across to get 4 large slices
  • ½ stick butter
  • 1 clove garlic minced
  • ¼ tsp garlic powder
  • fresh parsley chopped

Instructions

  1. mix meatloaf mix, egg, bread crumbs, milk, cheese, garlic, parsley, crushed red pepper and salt & pepper
  2. form into meatballs
  3. heat olive oil in a skillet
  4. brown meatballs on all sides
  5. add garlic and cook until soft
  6. add crushed tomatoes, italian seasoning, more crushed red pepper and basil, cover and simmer for 15-20 minutes
  7. top with more chopped parsley
  8. serve with garlic toast

garlic toast:

  1. preheat oven to broil
  2. melt butter and simmer garlic and garlic powder until soft
  3. brush bread with garlic butter and place on a cookie sheet
  4. broil in the middle of the oven, watching carefully so it doesn’t burn,
  5. when garlic bread is toasted remove from the oven and top with chopped parsley
  6. cut each slice into 3 wedges and serve with meatballs
