grilled chicken street tacos

Ingredients

  • 1 medium onion cut into wedges, keeping root intact
  • 1 lb skinless boneless chicken thighs or breasts
  • 1/4 cup fresh lime juice
  • 3/4 cup olive oil
  • 3 cloves garlic
  • 1 tbl ground cumin
  • 1 tbl ancho chili powder
  • 1/4 cup chopped fresh cilantro

Instructions

  1. make the chicken taco marinade by stirring together lime juice, olive oil, garlic, cumin, chili powder, cilantro, salt & pepper.
  2. brush onion wedges with marinade
  3. pour remaining marinade over chicken in a bag.
  4. let marinate 20 minutes.
  5. cook on hot preheated grill, about 5 minutes per side.
  6. let rest briefly, then dice into cubes.
  7. layer into to warmed tortillas and top as desired
