spicy chicken tacos

  • 2 boneless chicken breasts diced into ¼ inch pieces
  • 1 can chipotle peppers in adobo sauce
  • ¼ cup minced cilantro
  • juice of ½ lime
  • 1 tbl taco seasoning
  • 3 tbl canola oil
  • small tortillas
  • shredded jack cheese or mexican blend
  • chopped white onion
  • lime wedges
  • cilantro


  1. marinate chicken in chipotle peppers with adobo sauce, cilantro, lime juice and taco seasoning
  2. let sit at room temp for 20 minutes or in refrigerator for several hours.
  3. heat oil in a cast iron skillet
  4. cook chicken 5-6 minutes per side until cooked through
  5. heat a griddle pan and place tortillas topped with some shredded cheese
  6. let cheese begin to melt and top with diced chicken
  7. top with chopped white onion, cilantro and lime wedges
