cheddar burgers with a bacon onion saute

Ingredients

burgers:

  • 1 ½ lbs ground beef
  • salt & pepper
  • 4 potato rolls
  • 4 thick slices of cheddar cheese

bacon-onion saute:

  • 4 slices thick-cut bacon
  • 1 onion sliced in half and then into ¼ inch rings

special sauce:

  • ½ cup mayo
  • 1 tbl french dressing
  • 1 tsp relish
  • 1 tsp diced shallots
  • 1 tsp lemon juice

Instructions

bacon-onion saute:

  1. cook the bacon until crisp and remove to a paper towel
  2. cook the onions in the bacon grease until soft, around 10 minutes
  3. crumble the bacon and add to the onions

special sauce:

  1. mix all the ingredients together and set aside

burgers:

  1. preheat a cast iron skillet on high
  2. form meat into 4 patties and season with salt & pepper
  3. cook on high 3 minutes and turn
  4. top with cheddar cheese and cook 3 minutes more
  5. spread special sauce on bottom of bun, add the burger and top with the bacon onion saute.
  6. Serve with fries.
