lemon chicken

Ingredients

  • 1 whole chicken cut-up or any chicken parts
  • Salt & pepper
  • 1 cup lemon juice
  • ½ cup olive oil
  • 1 tbl red wine vinegar
  • 1 clove garlic minced
  • ½ tsp oregano
  • 1/8 cup parsley chopped

Instructions

  1. preheat broiler
  2. season chicken with salt & pepper and drizzle with a little olive oil
  3. broil chicken on middle rack, turning once until cooked thru, 20-30 minutes
  4. mix together lemon juice, olive oil, red wine vinegar, garlic and oregano
  5. heat sauce until hot
  6. pour over chicken and continue to broil 2-3 minutes more
  7. serve chicken with sauce poured over and sprinkled with parsley
