caprese stuffed garlic butter portobellos

Ingredients

  • 4 large portobello mushrooms cleaned and stem and gills removed
  • 2 tbl butter
  • 2 cloves garlic minced
  • salt & pepper
  • 4 slices mozzarella
  • ½ package grape tomatoes sliced thin
  • basil for garnish
  • balsamic glaze

Instructions

  1. preheat oven to broil
  2. melt butter and garlic with salt & pepper
  3. brush bottoms of mushrooms with ½ of the garlic butter
  4. place bottom side down in a baking dish
  5. brush mushrooms with remaining garlic butter
  6. fill mushrooms with tomatoes and top with sliced mozzarella
  7. put in middle rack of oven and broil for 8 minutes until mozzarella is browned and bubbly
  8. top with sliced basil and serve with balsamic glaze

Recipe Notes

these are delicious and so fast to make that if you had a guest that didn't eat meat you could throw it together in less than 15 minutes. if you don't have balsamic glaze or don't want to buy it, you can simmer balsamic vinegar for 10-15 minutes until it is thick.
