Ingredients

  • 1 lb ground chicken or turkey
  • 1 can chipotle pepper in adobo sauce 7 ounce
  • 1 tsp black pepper
  • 2 tsp cumin
  • 2 tsp oregano
  • 6 cloves garlic
  • 2 teaspoons salt
  • 1/2 red onion quartered
  • 1/4 cup canola oil
  • soft and/or hard tortillas
  • guacamole
  • pico de gallo
  • shredded jack cheese

Instructions

  1. heat 1 tbl canola oil in a pan and cook ground chicken 5-7 minutes
  2. put chipotle peppers in adobo sauce, pepper, cumin, oregano, garlic, salt, red onion and canola oil in a blender
  3. blend until smooth
  4. pour ½ of sauce into cooked chicken and simmer 5-10 minutes
  5. spoon chicken into taco shells and top with shredded jack cheese, pico de gallo and guacamole

Recipe Notes

the chicken is a little spicy, you can tone it down by adding fewer chipotle peppers
