spray chicken with olive oil and season with salt & pepper

grill chicken on low 10-15 minutes

mix bbq sauce and adobo sauce

grill pineapple on skewers 3 minutes on each side

brush on chicken and grill for 10 minutes more, turning and basting often

cut chicken into strips
-
place 4 flour tortillas down and cover with ¼ of the cheese each
-
top with chicken and pineapple
-
scatter jalapeño and cilantro around the quesadillas
-
place carefully on grill and top with remaining 4 tortillas
-
grill on low covered 3 minutes per side, being careful not to burn
-
cut with a pizza cutter and serve
