chicken pineapple quesadillas

Ingredients

  • 2 boneless chicken breasts
  • salt & pepper
  • olive oil spray
  • ½ cup bbq sauce
  • 3 tbl adobo sauce
  • 1 container pineapple chunks
  • 8 flour tortillas
  • 3 cups monterey jack cheese
  • 1 jalapeño sliced into thin rings, seeds and stems removed
  • ½ cup chopped cilantro

Instructions

  1. preheat grill
  2. spray chicken with olive oil and season with salt & pepper
  3. grill chicken on low 10-15 minutes
  4. mix bbq sauce and adobo sauce
  5. grill pineapple on skewers 3 minutes on each side
  6. brush on chicken and grill for 10 minutes more, turning and basting often
  7. cut chicken into strips
  8. place 4 flour tortillas down and cover with ¼ of the cheese each
  9. top with chicken and pineapple
  10. scatter jalapeño and cilantro around the quesadillas
  11. place carefully on grill and top with remaining 4 tortillas
  12. grill on low covered 3 minutes per side, being careful not to burn
  13. cut with a pizza cutter and serve
