grilled steak sandwich with chimichurri

Ingredients

  • 1 cup fresh italian parsley packed
  • 1 cup fresh cilantro packed
  • 3 tbl white wine vinegar
  • 2 tbl oregano
  • 2 garlic cloves peeled
  • 1/2 tsp dried crushed red pepper
  • 2/3 cup olive oil
  • salt & pepper
  • 2 large bell peppers preferably 1 red and 1 yellow, cut into 3/4-inch-wide strips
  • 1 1/2 lbs steak
  • sourdough baguette halved horizontally

Instructions

  1. preheat grill
  2. mix parsley, cilantro, oregano, vinegar, garlic, crushed red pepper and 2/3 cup olive oil in a blender
  3. season with salt & pepper
  4. toss pepper with a little olive oil, wrap in foil and grill for 20 minutes
  5. season steak with salt & pepper and grill for 3-4 minutes per side
  6. let steaks sit and grill bread
  7. slice steaks thinly
  8. place steak on bread, top with chimichurri sauce and peppers and other half of bread
