chicken with pancetta and balsamic

serves 4

Ingredients

  • 1 tbl olive oil
  • 2 oz pancetta
  • 1 chicken cut-up
  • salt & pepper
  • 8 whole garlic cloves peeled
  • ¾ cup white wine
  • 2 tbl balsamic vinegar
  • minced parsley

Instructions

  1. heat oil in a skillet and add pancetta and cook, stirring for 1 minute
  2. salt & pepper chicken and add to skillet
  3. add garlic and cook chicken 10-15 minutes per side until nicely browned
  4. add wine, turn the heat to high and deglaze pan
  5. when the pan is deglazed, turn off the heat and add the balsamic vinegar
  6. spoon the sauce over the chicken and add the parsley
