Ingredients

  • 2 split chicken breasts cut in ½, about 2 lbs
  • salt & pepper
  • 4 tbl butter
  • ¼ cup panko breadcrumbs
  • 2 tbl chopped shallots
  • 1 clove garlic minced
  • 2 tbl chopped parsley

Instructions

  1. preheat broiler
  2. heat a cast iron skillet
  3. season chicken with salt & pepper
  4. melt butter and turn chicken to coat
  5. arrange chicken skin side down and broil 6 inches from heat for about 5 minutes
  6. remove chicken from oven and turn skin side up
  7. broil for 5 more minutes
  8. remove chicken and turn oven down to 400 degrees
  9. mix bread crumbs, shallots, garlic and parsley
  10. sprinkle over chicken and baste with butter
  11. bake for 10-15 minutes more until the chicken is cooked through
  12. turn oven to broil one more time
  13. broil chicken to brown quickly
