Ingredients
- 2 chicken breasts
- 2 chipotle peppers in adobo sauce
- ¼ cup minced cilantro
- juice of ½ lime
- 1 tbl taco seasoning
- 3 tbl canola oil
- taco shells soft or hard or both, warmed
- shredded jack cheese
- pico de gallo
- guacamole
- lime wedges
- cilantro
Instructions

marinate chicken in diced chipotle peppers with 2 tbl of adobo sauce, cilantro, lime juice and taco seasoning

let sit at room temp for 20 minutes or in refrigerator for several hours.

heat oil in a cast iron skillet
-
cook chicken 5-6 minutes per side until cooked through

dice chicken
-
serve with jack cheese, pico de gallo, guacamole, lime and cilantro
