greek chicken kabobs
- 1 container plain non-fat greek yogurt
- 3 tbl olive oil
- ¼ cup feta cheese crumbled
- 1 clove minced garlic
- 1 teaspoon oregano
- salt & pepper
- 1 lb boneless skinless chicken breasts cut into 1 inch cubes
- 2 red bell peppers cut into 1 inch pieces
pre heat grill
mix yogurt, olive oil, feta, garlic, oregano, salt and pepper.
add chicken and marinate for 20 minutes at room temperature
skewer chicken and bell pepper alternately
grill on low heat 10 minutes per side until cooked through
serve with extra crumbled feta on top
serve with grilled asparagus - as soon as the chicken is done grill asparagus that has been sprayed with olive oil and sprinkled with kosher salt for 3 minutes, turning often.
