Ingredients
- 1 medium onion cut into wedges, keeping root intact
- 1 lb skinless boneless chicken thighs or breasts
- 1/4 cup fresh lime juice
- 3/4 cup olive oil
- 3 cloves garlic
- 1 tbl ground cumin
- 1 tbl ancho chili powder
- 1/4 cup chopped fresh cilantro
Instructions

make the chicken taco marinade by stirring together lime juice, olive oil, garlic, cumin, chili powder, cilantro, salt & pepper.

brush onion wedges with marinade

pour remaining marinade over chicken in a bag.

let marinate 20 minutes.

cook on hot preheated grill, about 5 minutes per side.

let rest briefly, then dice into cubes.

layer into to warmed tortillas and top as desired
