Julia Child would pan fry her burgers with shallots and butter.  The whole house smells good when you make these.

Ingredients

  • 1 tablespoon minced shallots
  • 1 teaspoon butter or mild olive oil
  • 1 to 1 1/4 pounds fresh ground beef
  • salt & pepper
  • hamburger buns
  • cheddar cheese

Instructions

  1. in a small saute pan, over high heat, saute the shallots in the butter until soft, about 5 minutes.
  2. divide the meat into 4 portions.
  3. shape the portions into 4 1/2 to 5-inch round patties, 1/4-inch thick.
  4. season each with salt, pepper and 1/2 teaspoon of the shallots.
  5. toast the hamburger buns.
  6. lightly dust the surface of a large, hot saute pan, with salt.
  7. when the pan is very hot, but not smoking, lay a patty in the pan.
  8. rapidly add a second burger.
  9. brown the meat, until blood shows on the top, about 2 minutes.
  10. turn patties to other side and top with cheese.
  11. cook until done, about 1-2 minutes more.
  12. remove cooked burgers to a warm platter.
  13. repeat process with 2 remaining burgers.
  14. place finished burgers onto buns add condiments.
