oven roasted poblano chicken fajitas

Ingredients

  • 1 package boneless chicken breasts cut into strips
  • 1 tbl chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • salt & pepper
  • 3 tbl olive oil divided
  • 1 bell pepper any color, cut into strips
  • 1 poblano pepper cut into strips
  • 1 onion sliced
  • flour tortillas
  • rice shredded cheese, salsa, guacamole and limes for serving

Instructions

  1. preheat oven to 425 degrees
  2. toss peppers and onion in a bowl with 1 tbl olive oil and salt & pepper
  3. spread on ½ of a sheet pan
  4. in same bowl mix chicken strips with remaining 2 tbl olive oil, chili powder, cumin, smoked paprika, garlic powder, salt & pepper
  5. spread chicken on other ½ of the sheet pan
  6. roast in oven for 20 minutes, tossing once halfway through
  7. wrap flour tortillas in foil and place in oven for last 7 minutes to warm
  8. serve fajitas with rice, shredded cheese, salsa, guacamole and lime wedges
