Ingredients

  • 2 cups chopped pineapple
  • 1 red bell pepper diced
  • 1/2 small red onion chopped
  • 4 green onions thinly sliced
  • juice of 1 large lime
  • 2 tbsp. extra-virgin olive oil
  • kosher salt
  • freshly ground black pepper
  • 4 bone-in pork chops fat trimmed

Instructions

make pineapple salsa:

  1. in a medium bowl, combine pineapple, pepper, onions, lime juice, and olive oil and season with salt and pepper.

pork chops:

  1. season pork chops generously with salt and pepper.
  2. in a large skillet over medium-high heat, heat oil.
  3. add pork chops and sear until golden and the internal temperature reaches 145°, about 3 minutes per side
  4. remove skillet from heat and let rest 3 minutes.
  5. serve with pineapple salsa.
