Ingredients

  • 4-6 thin sliced pork cutlets or chops
  • 1 cup panko bread crumbs
  • 1 cup seasoned bread crumbs
  • ½ cup locatelli cheese
  • salt & pepper
  • 3 eggs beaten with ¼ cup water
  • ¼ cup olive oil
  • sliced or shredded mozzarella cheese
  • 1 jar marinara sauce

Instructions

  1. preheat oven to 350 degrees
  2. mix both bread crumbs and cheese in a shallow dish
  3. put eggs and water in a shallow dish
  4. season pork with salt and pepper
  5. dredge pork in egg and then in breadcrumbs, pressing to adhere
  6. place pork cutlets on a plate as you bread all the pieces
  7. heat oil over medium-high heat
  8. cook pork cutlets 3-4 minutes per side over medium-high heat in batches– do not crowd in pan.
  9. warm sauce in a pot
  10. place cooked cutlets on a rack over a cookie sheet and top with sliced cheese
  11. cook 7-10 minutes until cheese melts
  12. ladle warm sauce on plate and place cutlet with cheese on top of sauce and serve
