Ingredients
meatballs:
- 1 lb meatloaf mix
- 1 egg
- 1 cup bread crumbs
- ¼ cup milk
- ¼ cup locatelli cheese
- 1 clove garlic grated
- 3 tbl chopped parsley plus extra for serving
- ¼ tsp crushed red pepper plus more for sauce
- salt & pepper
- 2 tbl olive oil
- 3 cloves garlic minced
- 2 cans crushed tomatoes
- italian seasoning
- basil
garlic toast:
- 1 loaf french or italian bread cut in half lengthwise and across to get 4 large slices
- ½ stick butter
- 1 clove garlic minced
- ¼ tsp garlic powder
- fresh parsley chopped
Instructions
-
mix meatloaf mix, egg, bread crumbs, milk, cheese, garlic, parsley, crushed red pepper and salt & pepper
-
form into meatballs
-
heat olive oil in a skillet
-
brown meatballs on all sides
-
add garlic and cook until soft
-
add crushed tomatoes, italian seasoning, more crushed red pepper and basil, cover and simmer for 15-20 minutes
-
top with more chopped parsley
-
serve with garlic toast
garlic toast:
-
preheat oven to broil
-
melt butter and simmer garlic and garlic powder until soft
-
brush bread with garlic butter and place on a cookie sheet
-
broil in the middle of the oven, watching carefully so it doesn’t burn,
-
when garlic bread is toasted remove from the oven and top with chopped parsley
-
cut each slice into 3 wedges and serve with meatballs
