Ingredients
- 1 1/2 lb lobster
- 12 oz . spaghetti
- salt & pepper
- 2 tbl olive oil
- 2 tbl butter
- 1 shallot diced
- 1 tsp red pepper flakes
- 1 package yellow grape tomatoes cut in half
- zest of 1 lemon
Instructions
-
cook lobster in boiling, salted water, head first for 6 minutes
-
remove from water and rinse under cold water until cool
-
cook pasta in lobster water, reserving 1 cup pasta liquid
-
cut lobster meat in to 1 inch pieces
-
heat olive oil and butter in a pan large enough to hold the pasta
-
saute shallots and red pepper flakes until soft, 2 minutes
-
add tomatoes and cook until juicy, about 5 minutes
-
add the lobster meat and stir
-
add the pasta and the cooking liquid as needed
-
cook until thickened, 1 minutes more
-
serve topped with lemon zest!
