Ingredients

  • 1/8 cup canola oil
  • 1 lb. hot or sweet sausage sliced into 1-inch pieces
  • 2 boneless chicken breasts cut into 1-inch chunks
  • 1 green pepper sliced into strips
  • 1 yellow pepper sliced into strips
  • 1 large onion sliced
  • 1 tsp garlic minced
  • ½ cup chicken broth
  • ½ cup white wine
  • 1 cup hot and sweet vinegar peppers sliced
  • ½ cup vinegar from peppers
  • 1 tsp dried oregano
  • salt and pepper

Instructions

  1. heat oil in a large skillet
  2. cook sausage until brown on both sides
  3. remove sausage and cut in 1 inch pieces
  4. salt and pepper chicken and sauté in same pan until browned and cooked through
  5. add peppers and onions and cook until soft
  6. add garlic and cook for 2 more minutes
  7. add sausage back into pan
  8. add wine and chicken broth and bring to a boil
  9. and in peppers, vinegar and oregano.
  10. cover and simmer until cooked through, about 10 minutes
